He descents from a family of cooks and thus took his first culinary intructions from his father, Haşim Usta.

Working as a researcher of the Turkish cuisine for ten years, Kalaycı has collected and filed Turkish recipes.

He invites all culinary masters, gourmets, and those interested in food and cuisine to his center in Bolu to rediscover old, forgotten dishes, invent new ones or simply talk about food.
